Sampled on tap. Von Ebert’s Dreams of Bahia pours a deep chestnut with a thin tan head that fades fast. The aroma hits with rich maple syrup, warm caramel, and a soft whisper of chai spice—cinnamon, cardamom, clove—woven into bready malt. No boozy edge; it’s inviting and cozy. On the palate it’s full and velvety without being cloying: maple leads, then layers of toffee, toasted nuts, and a touch of dark fruit (fig, raisin). The chai spice reappears mid-sip, adding gentle warmth and lift. Finish is surprisingly clean—sweetness lingers, balanced by light malt bitterness and a smooth, warming glow.
Being such a big brew it’s a slow, fireside sipper: luxurious, well-composed, never heavy-handed. The maple and spice elevate the barleywine character without overpowering it. Elegant winter warmer—rich, balanced, memorable.
