From a 500 ml. 2021 batch bottle. Sampled Sept. 6, 2021.
Attractive reddish-amber pour under a modest tan head and decent clarity.
The aroma emits Belgian malts but also I pick up a goodly amount of Bourbon sweetness, wood, candied sugar, but not so much in the way of Belgian spices. Still it is inviting.
The mouthfeel is light to medium. A little heavier than other Tripels I have had.
The taste is sweet and malt forward in the beginning with a slight boozy backdrop. Also Maybe some more clove here. A delight.

Stopped into Daydreaming recently with Caitlin and Alewife. We each tried the 3 versions of Destiny - basic, Bourbon barrel and Pinot Noir.... My preferred one was the Bourbon barrel.... Sampling today out in The 'Zebo from a 0.5l bottle, from The Lazy Dog, for $12.50....
Has a clear, rich, dark golden color, with light carbo. The head is thin, mostly some fine white foam at the rim with minimal lacing. Nose has lots of Bourbon throughout. Hard to pick up any Tripel-like qualities. This bier is rather smooth, and has a medium to medium-plus body.
Taste is lightly fruity with some crackery malt. Also has a touch of peppery spice. But from start to finish, the Bourbon action is quite noticeable, and quite tasty. Prosit!!
