We took our award-winning Belgian Strong Dark Ale Cistercian (formerly "Damn Beer") and rested it in brown sugar rum barrels for six months. We then brewed a fresh batch with a couple of small tweaks to the mash bill, bumping up Special B to provide an even deeper dark fruit experience - while the barrel aged version lends layers of complexity from the barrel.

From a 650 ml. bottle released in Winter 2023. Sampled March 11, 2023.

Handsome looking dark chestnut brown to about black colored pour with a tiny little head that dissipates promptly.

Wow. That aroma is all about dark roasted malts, toffee, dark fruits, wood, and earth.

The mouthfeel is medium to full. Closer to full. Smooth and warming.

The flavor is sweet dark roasted malts, hint of vanilla, alcohol, raisins, plum, and butterscotch. Lingering barrel-aged finish. Quite delightful.

Have already tried this twice on draft at Daydreaming, both on release day (12JAN) and again yesterday.... snagged a bottle to enjoy at home - which is now! A 0.5l bottle is currently selling at $10.00 at the brewpub. This is the barrel-aged version of Cistercian.

Poured into a sniftah, it is a very dark mahogany color, nearly opaque. Head is quite sparse and thin, with some beige foam clinging to the rim, with light lacing. Aroma has lots of dark fruit - raisin, dates and figs, plus a distinct rum aspect. Body is medium to medium-plus, with a very smooth feel with hardly any prickle.

Flavor is lovingly Belgian, with plum, raisin and figs abounding. Has a pleasant level of semi-sweetness, with caramelized brown sugar notes contributing nicely. And sneaking out from behind the dark fruit is a nice layer of rum. Where Cistercian is a solid Belgian Dark, the barrel-aging kicks things up quite nicely! This is very tasty, well-made and pleasing. Prosit!!
