Barleywine made in the English style with Maris Otter barley. We used an extended four hour boil to create complex melanoidins that contribute toffee and caramel notes. Open fermented for less yeast stress and a well attenuated finish despite the high alcohol. Tank conditioned for eight weeks then can conditioned so that flavours will continue to develop over time.
