Brewed in collaboration with Dead End Brew Machine and Tartarus Beers, our Barleywine was barrel aged for 6 months in ex-whisky, ex-sherry casks imparting a delicate sweetness among notes of Christmas cake.
Malt-driven flavours dominate the flavour profile from a combination of Melanoidin, Special B, and Crystal Malt, while Ernest and Olicana hops work with an unusual choice of NEIPA yeast to enhance the unique fruity character.
Notes of figs, dates and dried cherries become apparent with the addition of Kawa Ethiopian Yirgacheffe coffee, and added vanilla rounds out the overall sweetness.

Copenhagen 11/7 2023. 37,5 cl bottle from Kihoskh, Sønder Boulevard, Kbh. V. Black, brown and gold version of Vault City's usual design with the gate and lattice.
Pours slightly unclear maroon with a red hue. Mid-sized off-white head. Settles as thin but unbroken layer of foam just covering the surface of the beer, Crawling up the sides of the glass. Substantial lacing.
Aroma is medium intense with a sweet, sugary, malty, slightly boozy odor with candy-like quality. Caramel, toffee and sweet marzipan. Brown sugar and milk chocolate. Licorice. Wholesome.
Light carbonation. Medium thick, oily, soft, creamy, silken, slightly viscous, lightly tingling texture.
Flavor is fairly intense with strong sweetness followed by a medium strong bitterness. Aftertaste is sweet with a light bitter undertone. Lingers for a while. Finish is rather dry.
Quite pleasant Barley Wine. Sweet but not without a balancing bitterness and silken on the tongue.
