Le Búri Noir is an American Sour Ale co-fermented with Sonoma County Pinot Noir grape must and hand processed blueberries with pilsner malt, rye and flaked wheat sourced from our friends at Sugar Creek Malt.
With Búri we pushed our sense of the phrase Beer/Wine Hybrid by fully fermenting our sour base beer with Ebbegarden Kveik yeast (sourced from Escarpment Laboratories) then re-fermenting the Pinot Noir grape must and blueberries with a house blend of French wine yeast until complete dryness.

Saturated crimson tone, bright clarity, ample pastel purple foam that settles quickly with no lace. Visible carb trails, looks like a red pet-nat.
Aroma is all mixed berry yogurt, tastes much the same. Blueberry, cherry, blackberry in the mix. Light fleeting flavors, lactic and tart. Feels light-bodied and finishes a little watery. Ample carb that ebbs quickly. Refreshing and crisp, light and fruity. Summery and pleasant, could use a little more depth.
