This hybrid was primary fermented with a Norwegian farmhouse strain and Sangiovese. After fermentation was completed it was transferred to red wine puncheons and blended with boysenberry to start a re-fermentation completed by a Bordeaux red wine yeast and multiple strains of specifically picked brettanomyces.
