Out of our barrel program comes our first spontaneous fermented wild ale. Whole cluster carbonic macerated Marechal Foch (from Valentino Vineyards, Il) and Chambourcin juice (from August Hill Vineyards, Il), spontaneous fermented within neutral oak barrels and then refermented with our Mixed Culture Saison base.
