Eleven Eleven was brewed with Star Party yeast from Omega Yeast. Eleven Eleven is a thiol burst with aromas of passion fruit, dank pink guava, and citrus zest. Thiols are highly impactful aroma compounds and exist in two forms, free forms and precursor forms. Our brewer’s treat the Star Party yeast as a locksmith, creating a wort with precursor bound thiols which the yeast then unlocks to free forms with biotransformation, which adds a punch of flavor ideal for a West Coast. Expect big aromas and big flavor.
