Notes:
Vaya con Dios - A phrase that by very definition suggests you may not make it out alive. An if you do, you'll look at the world in a different way. Brewed with cinnamon and an ample amount of locally grown chili peppers, we think you'll probably survive this beer - but it will definitely have you looking at things in a different light. Heavy chocoalte notes and a rich malty sweetness, gives it a subtle spicy heat from those beautiful chilies.

After a not so hot Saison from Moniker, I’m a bit hesitant going into this other waxed bottle I got on my first trip there. Chili Stouts, historically, are more up my alley than Saisons, so I’m thinking it will be better but I’m setting my expectations low. Let’s get into it
Pours a very dark brown with 2 fingers of dark tan head that slowly fades to a ring and leaves decent lacing
The chilis are very green in the nose, but it matches the mezcal vibe nicely and is balanced out by sweeter notes. I’m picking up on aromas of chili pepper, smoky mezcal, dry oak, earthy cinnamon, cocoa powder, light vanilla bean, and dark fruit
It’s more subtle in taste, not really what I was expecting for 13% but it’s very enjoyable. On the front end of the sip I’m tasting milk chocolate, fresh oak, chili pepper, earthy cinnamon, plum, vanilla, and light caramel. The swallow brings notes of sweet caramel, smoky mezcal, dry oak, green chili peppers, vanilla bean, cocoa powder, and black cherry
A medium full body pairs with gentle carbonation, resulting in a smooth yet slightly biting beer. Finishes neutral and drinks well below 13%
I quite like this one. Not overly spicy and the mezcal never becomes over powering. Very nicely balanced actually
