Wild Saison & Cider Co-Ferment

Origin : The Raft / An epic collaboration between a brewery, a cidery (Overgrown Orchard), a community builder, and a social enterprise that advocates for underrepresented educators. This co-ferment aims to raise awareness of Black Educators Matter, a non-profit designed to celebrate Black teachers and their many contributions. In the spirit of community building, this collaboration crosses the aisle of fermentables, marrying a wild fermented cider aged for 12 months in ex-wine barrels with a saison beer inoculated with a native yeast culture from the Yucatan Peninsula at the largest underground cave system in the world. The result is an incredibly juicy and tart, pineapple-forward, fun and fizzy co-ferment that will stimulate your palate and your mind!

Pale canary gold, ample haze, thin layer of foam that fades to spotty lacing. Patchy skim is persistent, a plume of thin carbonation rising from the nucleation point at the bottom of the etched glass.

Rustic wild aroma, bright juicy acidity from the cider. Tannic apple skins, brie rind, restrained Brett funk. Tart and juicy apple, bittersweet with a clean tartness and dry, tannic finish. Light bodied with a clean acidity, light effervescence. Overall, very nice co-ferment, fruit and funk forward. Hope they collaborate more, this is even better than the other two ciders i’ve had from Overgrown Orchard.
