We took our Big Ivan– an intensely flavored strong dark stout beer – and aged it for 12 months in a bourbon barrel from our friends at 5Rocks Distilling in Brainerd, MN. The result? A smooth, rich beer, infused with flavors from the barrel: bourbon, chocolate, vanilla, and raisin, with a slightly smokey and dark fruit flavors as it warms up in the glass. No additives – just Big Ivan + bourbon barrel + time = BA BI YUM.

Chilled. Crowler dated 2.26.24, opened 4.27.24, poured into a snifter
Pitch black motor oil, thin 1/2 pencil brown layer that quickly fades , no lacings
Aroma is a faint bourbon, hint of coffee, hint of cocoa, hint of roasted malts
First sip was malty, roasted malts , bourbon, slightly acrid coffee, hint of cocoa baking powder , faint taste of licorice
Full rich mouthfeel , slight sudsing, weighs heavy on the tongue but not syrupy , bourbon on the finish
Good beer. Flavors are subtle , nuanced

Pitch black pour. Looks very thick and rich. Tan head.
I am getting some good bourbon notes here. Rich caramel notes.
The barrel ramps up the standard Big Ivan. I get all the licorice, chocolate, coffee and caramel. Notes of vanilla from the barrel. Somewhat of a roasted flavor, hint of smoke.
Thick, smooth and full body.
Tasty as heck, and the barrel adds just that extra flavor kick.
