A beer we were excited to make, our Absent Void imperial stout aged for a few months in a barrel from one of our favorite distilleries, Laird's who has been making apple brandy since colonial times in New Jersey. Perfectly paired with a neat pour of their 12yr aged brandy. Rich yet ethereal, a dense plume of chocolate smoke hangs still in a forest of banyan trees dripping from an afternoon rain, the falling precipitation a small offering to a sprouting grape vine.
