Using our Vienna lager as the base recipe, we pitched the thiolized lager strain developed by Omega Yeast . We harvested this yeast from our Polish Pils in order to explore the influence thiols have in a darker and maltier beer. We have always depended on our Czech Saaz hops to balance the malty sweetness of our Vienna lager, so being able to utilize a yeast that enhances existing compounds in those hops was exciting for us. Admittedly, with the development of this new yeast, the predicted fermentation results are equal parts expected and surprising. Nevertheless, the ability to explore uncharted beer territory by way of the four main ingredients, not adjuncts, is what excites us the most. The ability to learn, modify, enhance, and create beers while not compromising the qualities we value in our lagers is how we define the “craft” in beer.
The result of our latest experiment can be succinctly defined as liquid toast with orange marmalade. Notes of citrus dance along the ever present toasted bread qualities of our Vienna malt, resulting in a complex and dry amber lager.

I really liked the color on this one and there was a definite toasted bready flavor to it which was great. Love the Vienna Lager which is the base for this one so I was excited to try this and it didn't disappoint. Of course nothing Goldfinger does ever disappoints.
