Spontaneously fermented pale wheat beer. Aged 8 months in a single French oak barrel. Refermented on de-stoned Pond’s Seedling plums for 2 months before being blended with another barrel. These plums were grown locally by Cam Valley Orchards.
No added yeast or bacteria, just pure spontaneous inoculation and fermentation. Unfiltered and unpasteurized.

750 ml served in my Allagash tulip. Pours a dull, translucent orange with a loose, off-white head that quickly disperses into a consistent slick. Nose is interesting and complex. It’s difficult to tease out the elements. I get citrus, bubblegum, stone fruit, plum skins and a kiss of funk. Taste follow nose - plum skins are expressed as quite tart at the finish. Mouthfeel is light in body with an assertive carbonation and astringency. Overall, interesting and complex. I can’t see this maturing until 2040, but who knows.
