We were so preoccupied with whether we could, we never stopped to ask if we should. The first in a series of dino IPAs, Triassic features Chinook, Mosaic, Pacific Jade, and Columbus hops. Using the latest science, we fermented this west coast IPA with a thiolized version of the classic American ale yeast. Triassic is roaring full coniferous pine, floral strawberry, and orange marmalade. A bite of rye adds to a spicy, dry and refreshing finish, with an assertive bitterness.
