A traditional German Kolsch brewed with fresh 1620 oyster shells, straight out of the cold New England Waters. A dry finish with a hint of saltiness.

Aside from the chill haze, this one is almost clear and pale straw (SRM 2-3). A two inch white cloud slowly settles to almost nothing, leaving spotty lace on the Steigel stange. There is one half-hearted column of lazy carbonation.
The aroma opens with crisp lemon and is followed by a light brine (possibly from the oyster shells). Warmth brings out hay bales.
The flavor is subtle, with sweetness balancing bitterness. The lemon and brine carry forward, both being mild against faint sour dough bread. The finish is long, with lemon. Warmth adds tangerine and light earthiness.
The crispness aids the light to thin body and gossimer texture. There is a hint of alcohol and light carbonation.
This was a pleasant Kolsch with an interesting twist that worked surprisingly well. It is easy to consume several of these in one sitting or after a day's hard work well done.
