HIGHly TIPical is a 5.3% evil timeline witbier (Dark Witbier) brewed with spruce tips from @tinyacrefarm and pink peppercorn, hopped with Crystal, Saaz and Nugget.
This inverse style pours a late evening black full of sweet pine and red berry fruits followed by subtle spice and just a spritz of orange.

And the Origin tasting takes a weirder turn. Dark Witibier? What the hell does that even mean?? Whatever it’s supposed to be, I’m quite excited to try it out. I don’t tend to love traditional Witbiers so maybe this one will actually do something for me. Let’s crack it open and find out
Pours a very dark brown with a finger of tan head that slowly fades to a thin cap and leaves decent lacing
The aroma is surprisingly subdued, not too far off from their Czech Dark Lager I just had. I’m picking up on aromas of brown bread, peppercorn, drip coffee, cocoa powder, floral hops, light spruce tips, and lemon zest
It’s got more presence in taste but it’s still just as weird. On the front end of the sip I’m tasting lemon zest, cocoa powder, dark toast, toffee, medium roast coffee, white pepper, and light spruce. The swallow brings notes of spruce tips (that has a huge sustain), dark toast, fruity coffee, toffee, cocoa powder, lemon zest, and floral hops
A medium body pairs with gentle carbonation, resulting in a silky beer with a bit of bite. Finishes mostly dry with a slight tartness that cleans it up nicely
Against all odds, this one ends up being better than the sum of its parts. It’s really out there but I dig it
