For our five-year anniversary, we’re proud to share our most traditional Czech lager: triple-decocted, open-fermented, and brewed with @sugarcreekmaltco Edelweiss malt for the very first time. This heirloom malt is highly unmodified, which means it demands a step mash or decoction to unlock its delicate depth, and for this one, Brendan pours all his love into it. Rich, bready malt flavor, soft bitterness, and a clean finish that reminds us why Czech brewing traditions never go out of style.

Acquired a 16 oz can at a beer festival in Greenville, SC on 11-8-25. Canned on 07OCT2025; consumed 12-29-25. Cold stored since acquisition. The 2025 version is 4.1% abv.
Beer poured clear gold with a very nice white head that is leaving lacing behind.
Nose is dominated by herbal hops with a wee bit of crackery malts.
Taste is a light cracker malt base that is inundated with a very strong peppercorn hop; 9/10 on my bitterness scale.
Mouthfeel is light to medium bodied with an amazingly soft, chewy, and smooth body.
Overall, for me being a hop head i find the peppercorn overwhelms the malt base flavor and makes it way too bitter for the style (-.5 on my taste score). I found the deep bitterness as well when i was pouring at the festival but chalked it up to palate confusion at the time. Nope, this one is a bitter pill.

On tap at the brewery. Pours golden with long lasting white head. Aroma is of grassy hops and biscuit malt. Body is medium and crisp. Taste is similar to aroma. Finish is long and hoppy. Great brew.
