Inspired by the traditional beers of Trappist Monks this robust ale pours a deep chestnut color with aromas of raisins and dates. The malty-forward flavor has hints of toasted brown sugar from its time in bourbon barrels from Finger Lakes Distilling. It makes a great pairing with dark chocolate, game meats and aged cheeses.

Bottle procured at Brewery Ardennes; cellared by me for 11 months. Paired for dining with roast chicken and Demi-glacé; roasted brussel sprouts and apples and butternut squash ravioli. Excellent pairing. The rich dense dark fruits, barrel and background sweetness elevated the meal as hoped.
Beautiful deep chestnut brown with garnet accents to light. Nose full of subtle dried fruit, wood and biscuit. Flavor mirrored but further displayed tastefully slightly burnt caramel; orange peel and hints of vanilla. Body was smooth and lightly effervescent. A nice sipper that also brightened the tongue to food as well as the ale.
Overall a very enjoyable Belgian style ale brewed and aged exceptionally well. A perfect complement to food. Would love to have this again.
