Austere 6° is a Belgian Single and a Trappist-style beer. It is a yeast-driven beer brewed with belgian pils, munich, aromatic, and biscuit malts. We used Strisselspalt hops from France.

Pours an effervescent & slightly hazed gold with a sliver/pinky of ivory colored head. Average head retention & lacing
S: Juicy Fruit Gum, pears, melon, cloves once warmer
T: Pears, lemons, band aids, faint cloves & white grape up front. Pears, cloves, a touch of yeast & rubberband once warmed up, a little dryness & white grape too. Finishes with a little honey, pear, white pepper, yeast & melon
MF: Medium body, delicate carbonation
Has the chops of a from the Continent Belgian Blonde, drinks very easy

Pours almost clear, honey gold (SRM 5-7). Three inches of off-white head turns rocky before falling to a thin quilt. Sticky lace is left to coat the tulip glass, while random carbonation forms fine bubbles alongside big bubbles.
The aroma is fruity with fermented apple in a light perfume of lilac.
Light bitterness and the hop profile are on par with yeastiness. A faint tartness gives it a fresh taste. An assortment of honey, green apple, light cloves, and floral flavors fill the canvas. The finish is long, adding earthiness and a hint of funkiness.
It has a medium body and the texture of slick oil. Very effervescent, with alcohol that is more present than expected from 5.3%.
This is a pleasant beer to enjoy on a warm, late spring afternoon. This afternoon, however, was a bit chilly, so I paired it with soft Gorgonzola and went back inside. That was a good choice.

This one pours a slightly hazy golden yellow, with a small head, and lots of lacing.
This smells like honey, breadiness, clove, and perfume.
This is pretty solid, and well done, and relatively comparable to Trappist versions. It’s yeasty, but not aggressively so, with some floral notes, clove, and a light fruity sweetness. There’s a touch of grassiness, and a honey-like sweetness.
This is light bodied, crisp and clean, with a nice drinkability.
I love that Strangebird is doing beers like this.
