Walter, Jurgen’s new dog, is an old style short haired St. Bernard like the original 19th century Swiss Alpine rescue dogs. With Walter’s heritage in mind, we reformulated our Hefeweizen to an old style Bavarian Hefeweizen. We are using the original strain of yeast, the heart and soul of this Bavarian-style beer delicacy. It produces a hint of clove aroma and a pronounced fruity flavor profile. Paired with a moderate amount of Halletauer hops, this incredibly drinkable beer resembles a true time capsule of Bavarian brewing. Brewed in strict accordance with the Bavarian Law of Purity of 1516.

Much improved from the St Wilbur. Banana notes. Smooth taste with light fizz. Golden color.

Good ole cloudy medium amber color. Tangy, lemony aroma, with the customary touch of banana. Thin, slightly tangy weizen flavor. So-so.

frankly this is as good a domestically produced hefeweizen as i have ever had, up there with the likes of live oak and la cumbre and the very best of them, unique though too, and this really was a treat to be able to drink as my last beer before leaving the state of montana. its got a wonderful yeast profile, very old worldy, flavorful but also delicate, not fermented to the point of being phenolic, but done warm it seems, estery like clove, vanilla bean, sweet lemon curd, clove, and white pepper, really dynamic and expressive and light overall for how wheaty this is. the grain has an awesome flavor too though, fresh and slightly nutty, a little toasted depth to it past just the pale, not sweet or heavy, but more than the common cereal vibe many of these have. this shows a lot of attention to detail too, its authentic in every way down to the water chemistry, and feels creamy and finishes dry. its both fruity and spicy but also in perfect balance, and the effervescent carbonation is exactly right, just how i want this to feel. i know these guys constantly fly under the radar with their classic german brews, but this one deserves some real attention, and i now consider it among the best of the best, well beyond even my high expectations for it. absolutely not to be missed for fans of the style, i need more of this in my life this summer!
