a really solid sour here, impressive for a brewery that is just getting started. i understand they do or at least have done a lavender one too, which sounds awesome, but was not on when we visited over the weekend. this is a cool beer too, its bright neon pink in the glass and has just a short white head despite prickly and active carbonation throughout. it smells not too tart, and more like raspberry and cranberry than currant specifically, but thats a tough one. not real salty, nice and clean on the souring and the ferment, i like it immediately, even before i taste it. the flavor drips with natural fruitiness, tangy in its own right and without much sweetness. again a sort of piquant cranberry thing presents itself, maybe a hint of strawberry essence, seems like a good expression of the currant really. the beer is light, not a lot of wheat to it, and the salt aspect is pretty conservative too. i would like a little more of that, if just for the drying effect and mineral profile it imparts, but the beer isnt lacking without it. not too tart to drink by the pint, refreshing without being too acidic. very professionally made, which was a them up and down their beer menu. i think these guys have a bright future. somewhat safe overall, but well executed.
