my first from these guys, not sure they were there when i lived in colorado, anyway this is a pleasant and summery wit, not quite authentically belgian, but subtle and drinkable and not generic either, well made to be sure, a little clearer than expected but still with a wheaty look to it, yellow, soft, decent white head on it too, looks light and good. the aroma is chill too, light citrus peel to me, a white pepper and coriander note, could be from being spiced or from the yeast, its cohesive and well integrated like that, light lemon, lemongrass, pale wheat malt, and minerality, simple in a good way, exceedingly clean too without a big high tone estery thing, maybe fermented cooler than is common, hints of like french saison yeast too with the wit character, light spiciness there, very nice. the flavor is like that too, subtly complex but actually quite simple, elegant even, more refined than many, earthy off dry wheat at the core of it, white pepper and orange to me, lower on the clove and coriander type wit character now, even as it warms it stays pretty relaxed on the ferment, trace vanilla without being sugary, lemon and its zest, maybe a hint of black peppercorn, rocky mineral profile, good carbonation, fresh and easy feeling with a light herbal aspect and very high drinkability and refreshment value for a fermentation forward beer like this. an approachable and well refined example of the style, well done.
