From their website: "Saison is the blend of 2 bases, a saison fermented and aged in wood and a kettle sour naturally acidified with the microflora residing on Italian organic barley malt, according to an ancient process. With organic hops var. Centennial in kettle and ancient Tuscan wheat var. Verna".
Look: Hazy golden body beneath a full head of bright white.
Smell: Limited aroma with some sweetish malt, mineral, and a light suggestion of acidity.
Taste: Sweetish golden malt. Tart and gently mineralish from a lactic fermentation. Fruity like apple, and gently spicy. Median bitterness with a mild, lingering finish.
Feel: Light-medium in body. Crisp-then-smooth.
Overall: Very drinkable. Delicate yet complex. Compelling.
