33 cl glass (7€ at the pub).
Spontaneously fermented beer (Vintage 2022) that starts from a "strong" beer must and the addition of 3 ancient varieties of local apricots:
Ammiraglio, Pisana and Precoce di Toscana.
The first fermentation takes place in steel only thanks to the microflora resident on the fruit peel.
Afterwards the must was transferred to 700-liter tonneaux with thin staves, coming from Chianti Classico (first passage for the brewery), where the beer matures for more than 12 months.

On the nose, more woody than wild notes, sweetened by a soft scent of apricot pulp or ripe yellow peach.
the color is orange tending to reddish, while the foam is obviously minimal.
In the mouth, a full-bodied beer, with very minimal carbonation.
The taste is enveloping and characterized by apricot pulp, very rounded by a fine woody hint that gives an elegant complexity to the beer.
The taste has both sweet fruit reflections and wilder nuances, with the woody contribution of the barrel that helps to smooth out all the edges, raising the overall balance of the beer.
Mineral beer, which flows very well, absolutely masking those 10% that are only partially felt in the heat that the drink transmits.
Absolutely not a banal drink, not very acidic and characterized by a nice taste of apricots and wood, mineral like a natural wine, exalted local fruits.
General balance between fruity notes, sourness and woody roundness of the barrel.
