WAVES is one of many base stout recipes that make up the Dimensions of Time series. There are a couple slight tweaks made from batch to batch, but this recipe lends itself really nicely to non barrel-aged and adjuncted cans.
With this iteration of WAVES, we tweaked the recipe a little to pull back on the roast and boost the sweetness. Our addition of real Maple Syrup inline on the way to the pasteurizer allowed it to homogenize and spread equally through the beer so each can has a nice balance. What you get with this iteration is a stout that leans a little more towards pastry without significantly overdoing it. As we experiment with the brewing system we’ll continue to tweak this recipe to perfection. Join us on the journey.

A: Pours an opaque yet still clear thick viscous jet black in color with moderate amounts of fine active visible carbonation rising along the edges of the glass and very faint dark chestnut brown + dark chocolate brown + dark cola brown colored highlights. The beer has a three finger tall dense creamy sudsy foamy extremely dark mocha (approaching chocolate brown) head that slowly reduces to a large patch of thick film covering the entire surface of the beer and a thick ring at the edges of the glass. Significant amounts of lacing are observed.
S: Moderate to strong aromas of maple sweetness over the top of moderate aromas of roasted + toasted + chocolate + caramel + toffee malts with moderate amounts of caramel + toffee sweetness. Just shy of moderate aromas of chocolate and just a hint of vanilla.
T: Upfront there are slightly heavier than moderate flavors of roasted + toasted + chocolate + caramel + toffee malts with moderate amounts of caramel + toffee sweetness. That is followed by moderate flavors of chocolate and light flavors of vanilla. Finally there are strong flavors maple syrup with a slightly heavier than moderate amount of maple sweetness which lingers well through the finish. There are light amounts of roasty bitterness underneath the sweetness.
M: Full bodied with moderate amounts of carbonation. Smooth almost creamy and slightly sticky in the finish.
O: Easy to drink with extremely well hidden alcohol and a smooth almost creamy mouthfeel. Enjoyable with tons of maple aromas and flavors and quite a bit of sweetness without being cloying. Could be great brunch beer or dessert beer.
