This lambic blend uses three varieties of Pajotse organic quince macerated for 5 months in oak barrels. When mixing the 3 barrels, a part as pure quince lambic has been selected.
This blend consists of 60% quince lambic and 40% cider. This spontaneous cider is fermented and matured in wood. Obtained from organic apples from Pajotse soil using Norman varieties: Kermerrien, Marsengien, and Fréquin Rouge.

750 mL bottle. Clear golden. Smells of dry earthy cider, oak, dried grass. Tastes of tart green apples, grape must, oak, heavy earthy yeast flavor. Lambic character in the back end with oak, some cheese funk, and grassy notes. Very dry. Couldn't drink this quickly because of how dry it is, but a sip here and there is quite good.
