Lambik macerated on sweet cherries and barrel-aged after maceration. Blended with a small infusion of cinnamon to accent the almond and spiciness of the cherry pits. Based on a recipe from 1907.

A 750ml corked and capped bottle, 2021 vintage, with a best before date of 23rd January 2027. Poured into a Tilquin stemmed glass.
Appearance: A slightly hazy deep red colour with a slight orange tinge, and a one finger light pinkish head that had pretty good retention while leaving some lacing.
Aroma: Lightly tart, cherry, cinnamon, mixed berries, wood, and lemon juice.
Taste: Sour, tart, cherry, lemon juice, wood, with some subtle ‘spicy’ cinnamon notes.
Mouthfeel: Medium bodied with soft carbonation.
Overall: Drinks well with nice cherry in the flavour. Cinnamon was there but definitely on the subtle side. Would be interesting if the cinnamon was stronger.

Deep scarlet tone, frothy pastel pink foam that lasts long enough to leave some spotty lacing around the edges of the glass.
Rich cherry aroma, pleasant and straightforward, not as complex as the Oude Kriek, but definitely not sweet either.
Moderately acidic with tart cherries are front and center, familiar in a classic sense and natural tasting at the same time. Similar to a black cherry in richness of flavor, but more acidic. Medium bodied, smooth feel with ample acidity and a dry finish. Palate cleanser in the literal sense, which makes a great pairing with fatty foods like charcuterie and BBQ.
