Zymolysis is the scientific term for the process the yeast employs to turn sugars into alcohol. In Belgian style beers, this happens much the same way as it does in any other beer, wine, mead, etc., but the strain of yeast used produces an amazing array of flavors and aromas, much like a cabaret, but for the tongue, and nose, instead of the eyes and ears. Our dubbel features a complex spicy, and fruity character, mixed with the warm and inviting flavors of toast and caramel all packaged together in a highly drinkable and tantalizing beverage!

Taster at brewery. Pale golden pour with a small foamy head, so the color is a bit off. Aroma features the Belgian yeast notes, which follows through to the flavor. Not getting the pit fruit, raisin, prune notes, so to me this seemd more like a Belgian pale.
