Look: Pours a nearly clear medium-light yellow with a poofy head that balances atop the beer as a delicate pillow, and coating the rim with lacing as it recedes
Aroma: Lemons, coconut flesh, cedar wood, tangerines, grapefruit, pine, passionfruit, brewed black tea, wafts of pineapple, and some light malt. This is one trippy smelling beer
Taste: Opens up with lemons, tangerine, and cedar that dance on the palate for a second, and then joined by pina colada. Black tea and pine sap pop in quickly before the medley of tropical fruit crashes in and the tea/pine go back and forth with tropical fruit as citrus and cedar rejoin as it winds to a close, finishing again with coconut and pineapple
Mouthfeel: Full but light, clean, medium-high carbonation, and clean and crisp on the finish
Overall: I dig it. This is a new-to-me Cold IPA that I didn’t see featured 2 hops that have very unique flavor/aroma components to me – Sabro and Idaho 7 – but went in blind since I love the style so much. It is not only good but probably the most interesting and odd Cold IPA I’ve ever had with the flavor medley it contains; a blend of citrus, tea, cedar, coconut, pineapple, pine, and tropical fruit. Check it out if even just for the fun tasting journey that ensues

From a 4-pack picked up at the source in Hillsboro, OR
16oz can poured into a Bonsai Brewing 9th Anniversary glass
P clear gold w/ an ever so slight chill haze that develops; 1f frothy white head; quick recession; heavy webby lace
N med nose of semi-bright orange notes
T citrusy notes, zestiness, and light green hops over crackery malt; peppery, citrus, and passion fruit finish; seems like it may have some simcoe presence; a light dankness in there as well; tasty
Mf med-full bodied w/ med high to high carb
O quite the solid cold ipa- I dig it

STEEPLE JACK BREWERY CO. – ECHOS OF ATLANTIS COLD IPA 7%abv
This is a true delight to drink. It’s a refreshing fruity citrus blend that balances the middle ground between sweet and tart to I believe satisfy every craft beer drinker. I applaud the brew master for a job well done. The beer pours with a huge head with a complex citrus mix unlike any other beer out there. It’s hard to compare the taste to any known fruit but maybe melon rind. Its yummy and recommended.
The hops used are also not real common and add a lot to the great taste . They are Mosaic, Idaho 7, Azacca and Sabro.
