Beginning of a Beautiful Friendship features Phantasm, a by-product of New Zealand Marlborough Sauvignon Blanc wine production. These wine grapes are known to be heavy in thiols - a much sought after compound that has the potential to push tropical fruit notes through the roof. Pairing Phantasm with Freesytle Farms Nelson Sauvin as well as some of our favorite big hitter hops seemed to fall into place naturally as we developed this recipe.

Had on tap. Thicket dark orange juice hazy body with a finger of white foam. Huge tropical nose: guava, pineapple, mango, peach and somewhat dank floral hops. Taste has a similar set up with big juicy tropical notes and decent hop bitters and dankness, get addition of melon and orange but less pineapple. Medium bodied, juice forward, hop character could be more complex to cut in a bit more, but well done. Great debut with a fun twist of the phantasm

Poured into a Seattle Beer Week pint glass. Pours a very hazy, medium murky orange with a fine, two finger white head with great retention and thick lacing. Aroma of pale malt, citrus and tropical fruit hops with some light dankness, orange, mixed tropical fruit and mild stone fruit. Flavor is citrus, tropical fruit and dank hops, orange, guava, pineapple, overripe light stone fruit and some catty dankness. Pleasant moderate bitterness. Medium bodied with silky moderate creaminess. Although this was a hazy IPA, I took a chance on it, intrigued by the use of Phantasm, a thiol precursor rich product of wine making. Overall, this is my style of hazy, with the expected very fruity flavor dominated by tropical character, but with a decent bitterness to keep me interested. There is a mild white wine note to the flavor, but I may not have recognized it if I hadn't been expecting it from the description. The hops are largely classic Nelson Sauvin with some light citrusy notes. A little dankness added some more interest. Great mouth feel. I wish I knew ahead of time the IBU levels of these hazy ales, because the ones with good alpha oil levels, like this one are very appealing to me while most hazies leave me uninterested after a few sips. Interesting and flavorful, this is a good introduction to this brewery. I'll try them again.

On cracking can, huge whiff of over ripe pineapple. Pours the brownish shade of amber. Thick, low carb mouthful. Heavy, sweet and fruity.
