slightly hazy fruited ipa here done with simcoe and mosaic, and pineapple and coconut, the fruit is subtle and the hops are bold, which is what makes this for me, its fully ipa first, and i appreciate that a lot in this day and age of fruiting everything to oblivion and then only dry hopping them, this one has some bitterness too, really nice proportions, more my speed. cool place too, their little la osita craft bar that doubles as their taproom. this is straw colored beer, mildly cloudy and with a high white head and lots of carbonation from the tap. the nose is mosaic forward, neat with the actual pineapple in this, they make each other pop. the coconut is subtle, raw and fleshy and not sweetened, while the simcoe gives a little more aggressive bite to the second half, neat mix of hops and fruit, the ferment seems clean to me, and the grain base very light. the flavor is about the same, but the fruit is even more natural, and more bold on the back end than up front now, decent hop bitterness more than balances any fruit sweetness, which seems largely fermented out. the pineapple lingers just a little, so do some hop oils, and in addition to whats in this i also get elderflower, jasmine, white tea, and white wine, nice and bright and springy overall, awesome warm weather ipa. lots of carbonation is great, the yeast is almost invisible, and the finish is pretty quick for what this is. very well made, hops first, really dig it. i wish we had more time here to stay and drink through the rest of their lineup, some clever beers on and some super heady guest bottles too, well worth a visit when in madrid!
