on tap at blackrock in idaho falls, a fine example of the style, a little more rustic and farmy than their blueberry lemon gose was, and maybe the better of the two for my money. this has a cool fermentation profile to it, estery but more spicy than fruity, and with an almost half saison vibe, vinous like that, really interesting. i get white pepper and orange in the nose and taste, a ton of earthy white wheat character, and enough spiciness to almost convince me there is some pale rye malt in the mix as well, but i think its all from the yeast. it is neat to have something so yeast forward without it being out of proportion or running away with the whole thing, its not done too hot, and there is enough from the grain to stand out. i wonder if they use some special wheat in here, it seems fuller flavored and bodied than is common, maybe the mash chemistry is unique, not sure what, but it yields a wit that stands out from the crowd in the style, while also being rather authentic overall. some late citrus and lemongrass from whatever hops are in the mix, a flash of deeper nuttiness, and a not quite clean finish with a little soapiness on the swallow. tasty beer, nicely textured and carbonated, and i am excited about these guys moving forward. hoping to try some funkier offerings, looks like they are making some pretty cool beers! very ambitious, especially for this part of the state. i am into it!

edit: the second time i had this, or another wit, he was just calling it farmhouse wit i think, but the beer seemed somewhat more refined to me, cleaner and lighter, very expressive, and with a slightly wild but not bretty or funky yeast profile, less estery, more spicy, very rustic but also really dialed in on quality. i believe this is the same beer, this time around, just a lot more polished. increasing a few scores to reflect the improvement!
