It's a revival. Local malts, local hops, brewed locally and drank locally. Traditional drinking beer. Let’s get back to it.
INGREDIENT SPOTLIGHT: Characterful local malts provide complexity in a straightforward beer.
TASTING NOTES : Pleasant rustic malt flavors, biscuit notes, a hint of sweet fruitiness, and a modest, refreshing, balancing bitterness.
TRIBUTE: This kolsch is inspired by the iconic beers brewed by our dear friend Dylan Webber. Come Back.

Canned date unreadable but I doubt City Brew Tours would send out an old beer.
Looks fine enough, smell isn't terrible, bitter with hints of bread. Taste is not good. Bitter like a chemical bitterness, no signs of any malt presence, on the edge of being undrinkable for me. I'm reckoning that it's a bad sample.

Poured into a Uerige stange. Pours a light to medium golden amber with a big 5 finger white head with great retention and moderate lacing. Aroma of light, grainy malt, melon, and light grassy and floral hops; interesting. Flavor is grainy biscuit malt, melon, light green apple, mixed floral notes. Medium bodied with light to moderate creaminess. An interesting take on the style. The base malt is close to a classic one, but with a little more malt body to it. What sets this apart is that it has more fruit and floral character that may be the hops, but maybe due to the bagels used in the recipe. The latter is not to style, but I found it refreshing and continually interesting to taste. I love the idea of using bagels in the mash. I have to wonder if it changes flavor over time based on what bagels are left over. I like this hop bill better than a classic kolsch and would definitely get this again if it was in my area.

A: The beer is clear light golden yellow in color and has a moderate amount of visible carbonation. It poured with a half finger high dense white head that left a short head covering the surface and lots of lacing down the sides of the glass.
S: Light to moderate aromas of biscuit and cracker malts are present in the nose along with hints of grassy hops.
T: The taste follows the smell and has additional notes of green grapes. The hops also contribute a moderate amount of bitterness.
M: It feels light- to medium-bodied, crisp and quite dry on the palate with a moderate amount of carbonation.
O: The taste of this beer has an interesting contrast between the malty and fruity flavors along with the bitterness. I found the dryness in the mouthfeel to be quite refreshing.
