Mixed Culture Fermentation Pale Sour Ale Aged In Oak Puncheons
We fermented a pale sour ale using a unique set of our mixed cultures in a pair French Oak puncheons that previously held red wine. There is a beautiful oak expression leading the way, coupled with a strong fruit character (melons, tropical fruits). The moderate level of acidity cleans the palette after the flavorful show has run its’ course.

Large 750 ml bottle, direct from the source in Crown Heights Brooklyn.
Pours out with a moderate haze, and supports a lasting looser cap...moderate spotty lacing left behind. Dull, medium almond amber liquid.
Musty, moldy, and dank fruity sniff. Enticing.
Flavorful, complex, mighty tasty, and highly enjoyable creation from this pretty new brewery....moderate sour, notes of lime, tea, earth, over ripe pineapple....delicious...nutty/yeasty final pour is a bonus....go get some of this funky nectar.
