A traditional Belgian-style brew. Notable spicy and fruity aromas are rather forward. Brewing ours with wheat and a bit of light caramel malt rounds out the dry, boozy finish.
Boldly Belgian, our house yeast provides most of the character in this beer. The rest of the recipe is rather understated to let our yeast shine through. Sourced from Scourmont Abbey where Chimay Trappist beers are brewed, this yeast is distinctly fruity and spicy (notably banana). Aromas of stone-fruit and banana, with prickly background notes of clove and pepper define this charismatic brew.

From the growler via the brewery in a snifter. This solid tripel pours
a clear golden with a nice head of white foam that settles to a thick ring,
thin dusty layer, and sports some light lacing. Nose of white pepper, candy
sugars, banana, subtle clove, and light stone fruits of peach and a touch of apricot.
Flavors hit the mark with spicy white pepper, light clove, coriander, well placed
candy sugars, light peach, white grape, and subtle apricot with light fresh bread
and lightly herbal hop notes. Mouth feel is medium light, smooth, medium light
carbonation, and a moderately dry finish.
A true treat of a well made tripel done very well in America. Glad to have met the
brewer and visited the brewery.
