Sprawling industrial building on the main drag next to the creek near downtown. Rectangular bar toward center of the building has counter seating on the outside deck that runs along the creek side of the building and seats about 30. Plenty of tables inside on a couple of different levels. Layout creates congestion, and everyone having to order from the bar is quite a bottleneck. Place was busy and could have used more staff. The wait for food was also excessive.

Visited here with Da Boss for lunch today 11-20-21.
Vibe was typical high noon brewpub in the greater Asheville area where things are pretty quiet and mostly just middle age folks much like ourselves are having lunch and a beer except Da Boss was not having one today after a blood donation earlier. The Old Fort location is larger than the Asheville locale. Large expansive bar area for walk up ordering and imbibing. A lot of indoor seating where we chose a window seat by the small creek that was nice. Some outdoor seating by the creek as well. Large walk in entrance where the swag was located.
Quality of my brew today was good. Had the Bret NEIPA although not a hole lot of funky ness but a solid ipa for sure. Tasted the English Barleywine and decided to buy a crawler to go as it came across authentic and legit.
Service was friendly and good here and at the Asheville location, though it is self service like most places in the Covid era. Got the recommendation for the Funky IPA from the young lady who said it was her favorite. Worked with maybe the owner’s wife on the Barleywine order and she came across knowledgeable and friendly.
Selection was great as there were 24 house brews to choose from.
Food was very good as Da Boss burger was very flavorful and juicy. I had the corn beef Ruben which was high quality beef and very tasty as were the fries. All food products are locally sourced which is cool!
Overall Hillman is one of many quality brewers in the competitive Asheville market and IMHO they are operating at a high level between the brews and their service. Definitely will come back to either location!
