a wonderfully unique and delicious belgian pale here. i was impressed with the few beers i had from these guys on our trip to scotland, wish i got into more of them, but its obvious they have a good thing going, thoughtful beers very well executed. this is brewed with summer botanicals according to the can, which, along with the subtle spicy yeast and the wheat in this, create an almost saison-like drinking experience rather than the traditional belgian pale, and it ends up being really original. goldenrod colored beer not quite orange but deeper than yellow, with a rising white head on it that slowly falls back and some haze to it, not super well refined looking, but lively and to me rustic in an appealing way. the nose is awesome, light bitterness and even tartness, herbs and yeast together, some white pepper and coriander type belgian esters, subtle fruitiness too from golden raisin to red apple, cooked pear, and dried apricot, summery but also a little early autumnal as well, faint white wine, mowed lawn, and florals, elderflower and honeysuckle and even dandelion come to mind for me here, and its grainy without being sweet and outwardly malty, wheaty for sure, distinct in this style space. the flavor too is intriguing, fresh with the botanical element, slightly gin-like to me, a juniper and sage wrinkle, carrot flower or something, light sweetness to it for only a second, wildflower honey there, sturdy earthy grain, some rawness, and a peppery farmy fermentation that again hits a little saison-esque, soft citrus late, wildly interesting beer that would be easy to pick out of a crowd. very drinkable because it has my full attention, i can hardly set the glass down. i like the body and the late bitterness, the yeasty recall and the herbal freshness. really smart beer, awesome recipe, clever in a style that permits some wiggle room, and one of my favorite beers from our whole trip as i reflect on it now. put these guys on the map, this is wonderful! unexpected for a belgian pale, memorable.
