Stayed overnight in Dinkelsbühl this trip. Finally managed to get to Weib's Brauhaus and it is a winner! It has seats at the bar that are actually used and I managed to snag one. While they have only 2 biers, Helles and Weiss, they are both outstanding. While I was there, a constant stream of locals were coming in and leaving, ensuring a full house. Great vibe, friendly staff and good food. Recommended!

Dinkelsbühl may not be the most picturesque stop on southern Germany’s Romantic Road, I think that's probably Rothenburg Ob Der Tauber, but there's something different about it which makes it worth taking a look. Although it's encircled by medieval walls and gates, there's no central market, and the streets developed organically to accomodate specific markets (wine, bread, lard, cattle, leather). There are several other things to see (St. George's Church, the tall Renaissance patrician houses, the 10 day long Kinderzeche celebration in mid-July), and along with Weib's Brauhaus that makes it a destination.
Like many places in Germany it's a brewery, a bar/restaurant, and a guesthouse. It's in an unussuming, freestanding, seemingly ancient building in the altstadt between the western Segringer Tur and the northern Rothenburger Tur. It's a small town (you can walk from one side to the other in about 12 minutes), and Weib's has a small town feel. There's a limited amount of seating out front, maybe 24 seats, and around 30 more around back. As you enter the very basic bar is on your right. There's dining to the left and ahead of you, and the brew house is right there on display. The cellar with its open fermenters and lager tanks can be seen behind glass. Not that it matters, but their braumeister is a woman.
They produce two beers, a weiss and a helles. Both are very good to excellent, and inexpensive (2€ for a ,3L glass). They're unusual because they contain a caramel element that's hardly ever found.
The food follows along with this, and it's basically traditional German fare: liver dumpling soup 4,30€, a pair of Bratwurst 7,10€, pork schnitzel 11,50€, and their highest priced item, a grilled steak for 22,80€. Everything they serve is sourced locally or regionally.
In good weather the beer garden is open until 10 pm, while the seating out front goes until 11. Inside the hours are 11 am to 1 am daily with the exception of Wednesday when they open later at 6 pm. I'm not sure of the kitchen hours but I know that at some point they go to a very limited late-night menu.
