TRADITION - We used Weyermann Barke Pilsner, Weyermann Barke Munich, Weyermann Melanoidin to accentuate the overall experience of this authentic lager beer and enhance malt forward flavors. We built a Dortmund water profile of higher sulfates and then sparingly used Hallertau Tradition hops, a low alpha acid hop, to keep the hop bitterness low as to not overpower the drinker’s palate with excessive “bite.” Westphalia pours deep gold with aromas of honey, very subtle toffee, and nectar fruits. A true classic “old world” style that has been forgotten over time.
