Conejo Azteca envelops your palate in a constellation of roasted malt, toasty caramel and subtle hints of sweet coffee flavors. The balanced sweetness gives way to a gentle mystical bitterness and leaves a satisfying, crisp finish.

Thick, creamy ivory head. Clear, chestnut and caramel appearance. Rich, spiced medium caramel aroma. Slightly spiced caramel with a bit of woodiness, for the taste. Slight woodiness, in the finish, after a moderate mouthfeel.

Poured from 12oz can into a dimpled mug. Canned 3/14/25.
Appearance: medium brown hue with some haze to the body and a finger of tan foam atop.
Smell: nutty, caramelly malt aroma, with a little bit of chocolate in the works as well. I get more of a “brown ale” vibe than dark lager off this, though.
Taste: toasty, caramelly malt, with a fair amount of sweetness. There’s a bit of astringency as well, which I don’t love in the style.
Mouthfeel: medium body with a decent carbonation and creaminess.
Ovearll: this beer is kinda caramel-forward and has somewhat of a more astringent edge than I like in the style. It’s not bad, but it wouldn’t be my go-to dunkel.

Poured into a Seattle Beer Week pint glass. Pours a dark walnut brown with red highlights and a two finger khaki head with great retention and solid lacing. Aroma of dark, lightly toasted malt, nuts, brown bread, mild cocoa and a little vanilla. Flavor is dark, lightly toasted malt, brown bread, nuts, a hint of cocoa; mild continental hops in the finish. Medium bodied with light to moderate creaminess. A nice Munich dunkel that tastes quite similar to the darker Mexican lagers that it emulates, but with a little bit more depth of body and more noticeable cocoa notes. A solid example of the style.
