what an awesome bottle, huge thanks to my homie for picking this up and sharing it recently, my first from this brewery. a little blonder take on the biere de garde style, not a ton of french craft in the states, so this felt especially cool to tuck into, and really its wonderfully well done, the bottle conditioning is elite, and this drinks easy, effortless even for such a nuanced and intentional beer, and this is one of those ones that feels like an agricultural product in a real tangible way, i know all beer is, but this feels closer to farming somehow, closer to the land, maybe its the farm scene on the label, but there is something romantic to me in the glass here, i love it. the lightest orange color, well lighter than the reds and browns i have known to define the style, but this is still pretty much fully malt driven to me, as much as the fermentation is also central, its the grain that does the heavy lifting. light haze to this, high white head with fantastic retention, like beaten egg whites, micro bubbles in this too. it smells like honey nut cheerios, toasted barley and wheat, and is full of earthen minerals, almost clay-like to me, off dry with a honey note, a little whisper of white wine from the yeast, white pepper, coriander, dehydrated citrus zest, herbal tea, its bright but also grounded, rustic but refined at the same time, and all of this is there in the flavor. the ferment seems patient, cooler for a saison type, kept for sure, but without the oxidation that sometimes creeps into these. the hops are subtle but interesting, of french origin and botanical to me, i think there is more room for french hops in american made saison, but that is for another day. this has lovely baked character to it, full spectrum specialty pale malt to me, wheaty as well, maybe even some rye with a little peppery element, nice gentle esters here, coriander, lemon, and some granola later on. nice body to this, wicked mouthfeel with a ton of small bubbles rushing the whole time, white wine flavor as it warms, feels nutritive and hearty, overall a wonderful specimen, hope to track down more of their stuff. easily the lightest biere de garde ive had, but it sacrifices nothing and is not at all hurting for grain depth, even without the usual notes. fantastic!
