Our take on a traditional Berliner Weisse starts with a base beer of 40% wheat malt and 60% pilsner malt. It is then kettle soured for a period of 36-48 hours with the lactobacillus plantarum bacteria. Once the desired pH level is reached, the soured wort is then boiled to kill the living bacteria and the brewing process resumes normally. We then finished the fermentation of the beer with a German lager yeast strain. The sour flavors stand out over the clean fermenting lager yeast giving the beer a crisp refreshing finish.

Pale cloudy yellow with a white, finely-beaded head that lasts.

As close to a perfect Berlinerweiss as I've had at a brewpub. A lemony, slightly spicy nose leads to a lemony tartness over an estery, wheaty background. The mouthfeel is spot-on sparkly & spritzy. The finish is lemony, lactic, wheaty - perfect. Unbelievably drinkable. Usually served either red or green - I couldn't bear to add anything. Brewmaster Steve Schmidt nailed this one.
