This recipe was inspired by the stouts of yore, strong, dark and well hopped with all British ingredients. In the late 1800’s these strong, well hopped stouts were brewed for export by Scottish breweries such as William Younger & Co. Using a base of pale, brown and black malts we produced our own version.

Copenhagen 26/6 2022. 44 cl can from Mikkeller & Friends Bottle Shop, Torvehallerne, Kbh. K. An elderly Skelton drinking stout with enthusiasm.
Pours opaque, dark brown with a big light beige head. Settles as uneven, lumpy layer of foam struggling to cover the surface of the beer. Crawling up the sides of the glass. Moderate lacing.
Aroma is medium intense with sweet, malty and lightly roasted basse mingling with sour, sharp notes. Dark roasted malts, toffee, licorice. Orange and a bit of lemon. Dry vibe.
Low carbonation. Slightly thick, oily, soft, smooth, almost flat texture.
Flavor is intense with a medium strong sweetness followed by a slightly more moderate bitterness. Aftertaste is bitter and a bit sharp. Lingering. Finish is dry.
Satisfying bitter stout with a healthy roastiness and fine balance.

L- Jet black, even held up to a light. Pours with a 1Cm mid-tan super-fine bubble head that's undulating and creamy looking.
S- A coffee note, deep roasting + slight charring.
T- Brightness from trad hopping comes first, then roastiness and a notable charred aspect that lingers.
F- The dry hops are clear, far more so than in 'regular stout'. It's clearly a feature of this beer, something different and I like it. The 7.5% is very well hidden, perhaps because I served this fridge-cold.
O- I like it. If I had another I'd not serve it straight from the fridge, rather give it 5-10mins to warm a touch. I suspect with the latter the 7.5%+richness might open up a bit + detail in the taste.
What I also like is it comes over as trad, no 'modern hops', lactose, non-beer-like flavour add-ins etc. Very drinkable despite it's pungency. I'd very happily drink it again, though at the price it will have to be an occasional treat.
p.s. I just topped up my glass, and now have 15mm of the same incredible foam head. Where the last drops from the can dripped they've left a row of moon-like craters even 2mins later.... the foam cap as a whole is holding even 10 mins later... + late note/edit, as it warms a touch I'm just starting to get a subtle sour note appear.... very light tho, and also good/in balance.
