Mixed culture wild ale
Brewed with Scottish malted barley, wheat and rolled oats. Primary fermented with a mixed culture including a blend of Brettanomyces strains isolated from Belgian Lambic producers.
The second iteration of this beer is aged for four months, and packaged completely unfruited and unhopped to showcase the flavour characteristics of the mixed culture. We get super juicy stone and tropical fruits including passionfruit, pineapple, citrus and candied apricots.

Copenhagen 20/4 2025. 37,5 cl heavy glass bottle from Kihoskh, Sønder Boulevard, Kbh. V. Orange label with a Skull balancing on the top of a barrel while being soaked with colorful fluids running out of a pipe hanging above.
Pours unclear almost opaque golden yellow with a small white head. A bit bubbly. Settles as a thin patch of foam floating in the middle of the glass. No lacing.
Aroma is fairly intense with a sweet malty odor mingling with a tart notes and funky fumes. Sweet pale malts and bread. Tart gooseberries, sour cheese and a musty scent of forgotten Gym bag.
Medium strong carbonation. Slightly thick, oily, soft, gently tingling texture.
Flavor is medium intense with a light sweetness followed by a strong tart sourness. Aftertaste is sour with an acerbic streak. Liners for a bit. Finish is dry.

Aroma of peach, apricot, and orange. Funk brings hay and horse blanket.
Taste is tart, with flavors of pineapple, orange, peach, and apricot. Lots of yeast funk, which further dries the brew.
Medium mouth feel. Very dry finish. Mouth cleanser. Good carbonation.
Lots of fruit flavors without added fruit.
