Holy Goat Brewing

Inspired by the Belgian framboise our version is primary fermented with a brettanomyces blend which produces intense juicy stone and tropical fruit flavours. In this, our 2023 iteration of Spectral Lore, we refermented the base beer on 250g/l of tayberries and an additional 80g/l of strawberries, both harvested around 12 miles from the brewery. Whilst a framboise is traditionally brewed with raspberries, we decided to use tayberries to showcase their intense raspberry character, vibrant pinkish red hue and huge aroma. Drink young or age, this will get weirder.

All ingredients were harvested within 33 miles of the brewery.
