This beer takes inspiration from the historic Belgian style of ‘Oud Bruin’, sharing similarities to the Flanders Red and British Stock Ale.
Our version is primary fermented with a Brettanomyces forward mixed culture, and blended from two different batches with an average age of 4 months.
We incorporated our favourite rye, crystal and light roasted malts in addition to Brewers Invert Sugar No. 2 – a specialist sugar used historically in the UK and Belgium in dark, strong ales providing unique caramel/treacle flavours.
We then refermented this blended Oud Bruin on 150g/l Scottish strawberries, sourced from farms located within 60 miles of the brewery.

Copenhagen 23/5 2022. 37,5 heavy glass bottle from Mikkeller & Friends Bottle Shop, Torvehallerne, Kbh. K. Dark red label with all the ingredients of a good old Black Sabbath including a goat and a devilish lady.
Pours murky maroon with a small bubbly white head. Settles thin, almost transparent patch of foam unable of covering much of anything. No lacing.
Aroma is medium intense with an odor of sweet, fruity, boozy fruit mingling with tart fumes. Caramel and toffee. Sweet forest berries. Apricots soaked in alcohol. Tart, sour gooseberries.Whiff of sour cheese.
Light carbonation. Medium thick, oily, soft, smooth, lightly tingling texture.
Flavor is medium intense with s medium strong sweetness followed by strong, tart sourness. Aftertaste is tart and acerbic. A bit searing. Lingers for a while. Finish is bone-dry.
Quite civilized but still interesting Out Bruin. Maybe a bit too civilized for a Demon Feast.
