they have a regular peche too, which i have not had yet, but this is a special edition, finished in calvados barrels, large format, 2022 vintage, wicked bottle share bring by a homie, have loved the few beers ive had from this operation and was stoked to get into this! blonde with light haze though the whole bottle, lots of large bubbles but not holding much head, an early indicator of how acidic this is, but quite light looking in body, even with the haze, unassuming. the aroma is wonderful, and it gets better as it gets less cold, we pulled this from a cooler with ice which was too chilly for sure. the fruit is there, real, ripe, fuzzy, but late to me, lots of room before it for the subtle earthy grain, rustic but delicate at the same time there, neat minerality, sourness is obvious too, mouthwatering, lemony, lactic, some sulfur, some bretty funk too, a faint coriander note, and then the fruitiness of the brandy, apple and pear both to me, cooked, adding some needed sweetness it seems before the peach does, vanilla to the oak here, sharp still, even acetic, very complex. the flavor is a neat journey, again because the fruit is very late onset, almost to the swallow. its there earlier, but its climax is late. apricot and honey, pear and green apple, dehydrated red apple and dry cereal, white wine, then finally the ripe yellow peach, with its tart fuzzy skin and drippy sweet interior, wrapped in yeasty funk and again a but of sulfur type weirdness and stony minerality, deeply earthy and distinctive on the whole, fruit sugar comes and goes from the palate very quickly, and the barrel adds uniqueness without overwhelming, love the choice of calvados for this, great synergy with the authentic peach. sharply sour as it warms, but still kind of wild too, pleasant woodiness, very light malt, quick to resolve, natural peach on the exhale. really clever beer, too sour for high volume drinking, but a really nice one to savor a little bit of for sure, vinous and interesting, lively carbonation. a special bottle.
