what a cool edition of an already amazing wild beer from these guys, they have something going very few other breweries do, which is an unbelievably distinct polycultural fermentation that is just so unique. this is a fairly clean one, still with some funk, but the beer is clear and the finish is dry, less of the brett and more of the bacteria and acid, and oh man the barrel. i get notes of red apple and red wine together, oak tannins, wet wood, sweet brandy notes, dark red fruits, just so much going on. a sharply acidic profile in the middle, smoother in the end, some clean wheat, medium body, slight peppery spice too. very complex beer, and where the yeast stops and the barrel starts is hard to distinguish, the flavors are so layered but also well integrated that it all blends together seamlessly. delicious beer, great depth for a lower alcohol sour beer, and another gem from one of the most under appreciated and least talked about producers of this kind of thing. not sure how they still stay under the radar, but they do. apple and acid at the end, newer oak, just awesome beer. is this draft only or are they filling some bottle too? i bet this will age with the best of them...
